Today, I’d like to share with you my recipe for delicious chocolate fudge protein brownies. These brownies are not only incredibly tasty but also packed with extra protein, making them a perfect treat for my three active sons. They absolutely love brownies, and I wanted to find a way to incorporate some additional protein into their diet.

The protein in these brownies comes from the combination of eggs, ground nuts, chia seeds, oat flour, and chocolate protein powder. I personally prefer using whey powder, but you can use any type of protein powder you have on hand.

Chocolate Fudge Protein Brownies ingredients

400g dark chocolate – broken into squares

400ml vegetable oil

6 large eggs

1 cup 50% sugar** or 2 cups normal sugar

1 tablespoon vanilla extract

1¼ cups oat flour***

1 cup chocolate protein powder

⅓ cup (80ml) cocoa powder

1 teaspoon baking powder

½ teaspoon salt

½ cup ground mixed nuts

½ cup chia seeds

60ml espresso coffee

You will also need

1 large (28x36cm) baking tray or three small (15x24cm) trays at least 5cms deep

** I’m using Tate & Lyle 50% which is granulated sugar and stevia

*** make oat flour from rolled oats by processing the oats as fine as you can in a food processor or spice/coffee grinder

Preheat the oven to 170C (fan) or 180C

Grease and line your baking trays

Put 400ml vegetable oil in a large heatproof bowl

Add 400g dark chocolate broken into small squares & melt in the microwave for 60-90 seconds at 30s intervals

Stirring between each 30s, until fully melted

Add 6 eggs to a large mixing bowl

And 1 cup 50% or 50/50 sugar or 2 cups normal sugar

Beat together for a few minutes until light & fluffy

Turn the mixer to low and fold in 1 tablespoon vanilla extract and slowly pour in the chocolate oil mixture

Then add 1 1/4 cups oat flour, 1 cup chocolate protein powder and ⅕ cup (80ml) cocoa powder

Add 1 teaspoon baking powder, 1/2 teaspoon salt, 1/2 cup chia seeds, ½ cup ground mixed nuts and finally 60ml espresso coffee

Mix until smooth. Stop the mixer when your mixture is glossy and gooey

and divide between your prepared baking tins

Spread the mixture to the corners and bake for 20-25 minutes

Remove from the oven and let cool in the pan for 10 minutes

Then carefully lift it out of the pan and let cool completely
